Tomato Soup
Saute one chopped onion until tender. Add 2 cans of chopped tomatoes. Add a can of white beans such as Northern. You can drain and rinse the beans if you want. Add a healthy squirt of barbeque sauce (about 1/4 cup) or ketchup whichever is handy. Add a dash or 2 of hot sauce. Add a can of chicken or vegetable broth. Add about a teaspoon of dried basil and oregano. Stir and cook about 5 minutes or so. Using a ladle spoon into a blender or food processor and blend until smooth. You may have to repeat this process a couple of times. Add salt and pepper to taste. Return to the stove to reheat or the microwave.
It makes enough for about 4 bowls of soup. You can put it in a bowl and freeze for later.
